These are so easy, and pretty quick, too.

Preheat your oven to 450. Cut up potatoes like so (ish). 3-5 minutes into the preheating process, put a 9x13 glass pan in the oven to get it
nice and hot.

After the pan has been in the oven for a few minutes, put about 3 tablespoons of butter in the pan and let it melt. It should take about 2-3 minutes, and by this time your oven should be close to 450.

Once the butter has melted, remove the pan from the oven and toss the fries in it with a good bit of salt and pepper. Put pan back in the oven if it's done preheating. Bake for 15 minutes, then toss. Bake for 15-20 mintues more (toss a bit every 5-7 minutes or so)...
