Sear-Roasted Salmon with Honey Glazed Fennel

I tried this recipe earlier this week. It was pretty good. Actually, it was more pretty than good. So here's a nice picture.

Mad Hungry

Lucinda Scala Quinn is one of my new favorite people.

Because she came up with this recipe for Chicken Chili.

I made it. It was delish, to borrow a Martha-ism.

You broil these guys:

and you get this:

Then you add chipotles (!), 1/4 cup chili powder, and lotsa other good stuff. It is crazy good. I often don't get final pictures of some of the best recipes I make because I am too busy eating it. That happened this time.

Mrs. Quinn has a cookbook, Mad Hungry: Feeding Men and Boys, which has all kinds of other good stuff in it. It is now on my Christmas wish list. You should put it on yours.

I just discovered that she has a blog, too.

...and oh was it good. The recipe uses raspberries as the fruit, but my mom made one with frozen triple berries and one with mangoes. Ridiculously easy (you don't even need and ice cream maker) and so yum. Recipe here. Martha came through again.

I'm a bad aunt.

...because these are the only new pictures I have on my nephew. The camera never seems to be close by when I get to see him. I'll try and get some better pictures soon.
